Guide - Collect Sap

Sap flow generally peaks during the months of January and February, However this varies by location and year.

Best sap flow often occurs when the days are warm and nights are cold.

During peak flow up to a Gallon of sap can be collected in a matter of hours, it is therefore important to check your taps regularly, 1-2 times a day.

A good tree can produce 10 – 12 gallons of sap per season.

It is important to boil-down the sap soon after it is collected(a few days) as sap will being fermenting and spoil.

Sap can be stored for longer periods if it is frozen.
